Mussel Linguine

This dish is one of those dishes I always make when people from out of town ask “what’s New Zealand Cuisine?”. I think we’re too young to have evolved our own cuisine; so this dish throws together some unique local ingredients with one of my house specialties – fresh pasta. [Photos to come]

Tagliatelle con Melanzane - as seen on TV.

This is a dish I had in a restaurant in Sicily. Silky fresh pasta, combined with sweet eggplant and salty olives, covered in crunchy pistachio nuts. This is also the dish I cooked on The Circle, live, on Australian TV.
